"Honey, where is the camera charger?"
"I never know where you put things."
"I didn't put it anywhere."
"Well, then it's right where I left it."
"Where's that?"
Needless to say, we don't have our camera charged for Christmas today. Christmas is at my house this year, so here I am at 1:00 am prepping food. I've been cleaning the house all day, and now I need to mop the kitchen again....I'm such a messy cook. The ham is ready to go. I made the pomegranate cream cheese tart with the almond crust. Little smokies are bubbling away in the crockpot in a beer sweet and sour sauce. I think I am done. But where, oh WHERE, is that camera charger?????
Pomegranate Tart
Deceptively simple - undeniably delicious
11 inch tart pan - spray with cooking spray
CRUST:
1/2 box vanilla wafers
1 cup almonds, toasted
4 TBS butter
2 TBS water
1/4 tsp. almond extract
Pulse wafers, extract, and almonds in food processor until coarse. Add H2O and butter and pulse until moistened. Press into bottom and on sides of tart pan. Bake at 350 F for 15 minutes and cool completely on a rack.
Filling:
2 (8oz) packages neufchatel cheese (lowfat cream cheese)
1/2 cup sugar
1/2 teaspoon almond extract
1 teaspoon vanilla extract
Blend all ingredients together until smooth and spread into cooled crust. Top with seeds from two ripe pomegranates. Chill 4 hours before serving. YUM! (If I had the charger, I'd take a picture....)
