Half of my freezer is filled with duck. I hate it. But my husband likes to shoot the pod-scum and bug eating, vermin-infested, stinky little critters. Don't get me wrong, I'm glad he has a hobby. It MIGHT be better than him watching football all the time. He needs his stress relief. In the past, I have tried many recipes with duck breasts. I have tried it sauteed in wine with artichoke hearts, deep-fried with orange dipping sauce, as jerky, and I gotta tell you it's all yucky. Let me just say this right now - wild duck tastes NOTHING like the grain-fed stuff you buy at the store.
Every few years, I forget that I don't even like to work with it when I have gloves on and I decide to do something crazy. I cook with it. Recently, my overflowing freezer begged me for some relief. I acquiesced, and decided to try making GOOD jerky! Riiiiiight. I sliced it thin (eeew), marinated it, and stuck it on racks to smoke (blech).
What did I end up with? A stinky back yard, hands that (despite the gloves) smell like duck even after numerous washings and three lemons, and a dog that won't quit licking said hands.
This may quack you up, but I am ready to throw it all back in the pond.
