You put the lime in the coconut...

My mom went to a little shop in Sacramento called Babycakes.  Cute name.  Can you guess what they make?  Cupcakes...gourmet cupcakes.  She requested their vanilla cupcake with lime filling and coconut buttercream for her birthday party. She even brought one home for me to taste.  I'll admit they were good, but  I was NOT going to drive for hours for something with no caffeine in it!  Besides that, the cake was really heavy and the buttercream rather dense.  So I decided I had to try to duplicate them...with a few changes   It took a few different tries, but I only have one thing to say:  Eat your heart out, Babycakes!  Mine were...
